I baked veggies the other day and the shiitake mushrooms I threw in were a bit of an afterthought. A wonderful afterthought. I am in love. If you are wondering, those are purple sweet potatoes. All I did was chop the veggies, toss them in some salad oil (I would have used olive oil if I had had it), salt, pepper and garlic powder and baked them at 180 degrees Celsius for about 40 minutes, until the sweet potatoes were cooked through.
Veggies: shiitake mushrooms, carrots, purple sweet potatoes, asparagus
I highly recommend baking shiitake mushrooms. I think I like them this way better than grilled.
