I recently heard about mashed cauliflower as a low calorie alternative to mased potato. I was intrigued because I love cauliflower and it is inseasonright now. I love it. I boiled it, put it in the food processor with some butter, and topped it with parmesan cheese.
On the plate: mashed cauliflower, salad topped with basil and cheese dressing and left over baby potatoes sauted with spinach and butter.
