Savory Baked Pancake

This was a last minute meal inpired by a picture I saw on Facebook. The poster added peppers and sausage to Yorkshire pudding batter. I have my nana’s Yorkshire pudding recipe somewhere but I was too tired to go searching for it. I instead made a savory version of the baked German pancake recipe I have. I like it.

Savory Baked Pancake

1 small package mini sausages
1 red pepper, roughly chopped
1 bunch asparagus, chopped
2 eggs
3/4 cup milk (I used soy milk)
1/2 cup flour
1/2 teaspoon salt
1-2 teaspoons curry powder
1 dash garlic powder
2 tablespoons oil

Preheat the oven to 200C. Fry the vegetables and sausaged in a bit of oil (or none if using a non-stick pan) until the asparagus is cooked. While that is cooking, whisk the milk, eggs and oil together. Whisk in the flour, curry powder, garlic powder and salt. Stir in the cooked vegetables and sausages. Bake in a round casserole pan or pie pan until cooked in the middle. Mine took about 30min.
