Veggie Goodness for Lunch

On the menu:
Roasted purple cauliflower
Broccoli soup
Home made wraps with spinach hummus and tomato

As you can see, I was too lazy to make perfectly round wraps. I only try to do that for guests.

This is my second spinach hummus. The first one had cooked spinach in it but my food processor didn’t break it up well – it didn’t even turn green. I decided to go with raw this time. I didn’t have any fresh garlic or I would have used it instead.

Spinach Hummus

One can white beans
Juice of half of one lemon
2/3 bunch of spinach roughly chopped
One glug of olive oil
Salt, pepper and garlic powder to taste

Throw everything in the food processor and process until smooth. Serve.
