Scottish Oat Scones with Blueberries

Sundays are 40-50% off frozen food days at the local grocery store.  I usually only purchase ao jiru but this week I also picked up a bag of blueberries.  I was originally was going to make muffins with them but oat scones are just as good.  I really don’t know where this recipe comes from.  If it looks familiar please let me know so I can give proper credit.

Scottish Oat Scones

1 1/2 cups flour
2 cups rolled oats
1/4 cup sugar
4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup currents (I used 3/4 cups frozen blueberries)
1 egg
1/2 cup melted margarine (I used cooking oil)
1/2 cup milk

Mix the dry ingredients together in a large bowl. Mix the wet ingredients in a small bowl.  Add the blueberries (or currents) to the dry ingredients, stir quickly and add the wet ingredients.  Stir until combined.  Add to a pan of your choice (I used a round silicone casserole dish) and bake at 425F/230C for15-20 minutes.  Cool and cut into wedges.
